for 4 Persons

"Rouladen auf fränkische Art"

(meat-roll made in the franconia way)

in Red Wine Sauce



Ingredienz: 4 big meat-rolls from beef
12 weak disks of ham or bacon (smoked meat)
1000 Grams onion
5 clove of garlic
horseradish-cream
mustard not to hot
4 vinegar cucumber
1 bottle of red wine



Instructions: You may but the meat on a table, side by side.
Spice the meat-rolls both sides with salt and pepper.
Now, take a spoon and bring mustard inside of the rolls.
Next step is, to each 3 discs of ham or bacon on 1 roll.
Onion cubes and chopped garlic has to bee distributed above this.
Horseradish-cream over the onions (not to much).
In the end you have to roll careful with vinegar cumber
inside an to fix the ready roll with a little spit.

The meat rolls are ready now, to bring them into a roaster.
When the fat in the roaster is hot, You may have to bake the rolls brown
No the rest of onions and garlic have to come inside the roaster too.
Waiting for a few minutes now, until You give 1/ liter red wine and 1/2 Liter beef tea in the pot.


The roaster has to come into the oven now, for a good hour and fixed by 150° C.
The top has to bee closed
